Low carb coconut candy

My 4 ingredient coconut candy. I LOVED Nigerian coconut candy as a kid. 

Eating these brought back fun childhood memories.

INGREDIENTS: - Unsweetened coconut flakes

- 6TBS unsalted butter (not shown)

- 1/4 cup stevia

- 2 cups heavy whipping cream.

DIRECTIONS: - In a pot, add stevia, heavy whipping cream and butter. 

- Bring to a boil and keep stirring. Continue to stir for 15-20 (until it thickens). - Put the thickened milk in the fridge to cool for 30-45 minutes. - Preheat oven to 375. Use liners in a cupcake pan. - Once the milk cools, add it to a bowl and add the coconut flakes. - Create balls and place in the liners. - Bake for 20 minutes. 

Cool and enjoy!

NOTE: It doesn't combine and create a sticky ball but it is just as delicious.
